Hi Mason Jar Family! I started making lunches in a jar about a year or so ago. I find it is so much easier to reach in the fridge and just take out a jar, pour it in a bowl or plate and voila! Quick lunch! I will be listing a few different recipes within the next few days of mason jar recipes. It is relatively easy to put together and most are quite low in calories. No need to use a vacuum sealer and they can stay in the fridge for up to a week. So if you are looking for something to help keep you on track or just something to make a quick lunch try out making some jars of this wonderful Mandarin salad. Be sure to layer it in the jar as listed otherwise you will have a soggy salad.I use quart size mason jars. You can double or triple the recipe so you will have lunch for a few days. Enjoy...Till we meet again..Mama Carol
Start layering your items as followed: 2 Tbsp light honey Dijon dressing 3 oz sauteed chicken breast cut into pieces 1/2 cup mandarin orange slices in light syrup or in it's own juice 2 cups chopped lettuce (you can add some fresh spinach leaves too if you would like) 1/4 cup dry chow mein noodles (add these after salad is on plate do not refrigerate otherwise they will get soft in the fridge) After you have layered all of your ingredients just screw the top on and put in your fridge until ready to eat. Only 330 calories per jar!

As a mom to a busy toddler who loves to eat, sometimes taking the time to make a somewhat healthy meal just isn't an option. Just because it's lunch time doesn't mean he stops trying to feed the dog the remote, swipe my tea,or climbing and jumping from things that give me a heart attack, so I need something quick without reaching for junk. My need to save time and not wanting to serve my son complete junk brought me to this. I use nitrate free hot dogs, and jiffy corn muffin mix and pop the mix into my cake pop maker. If you don't have a cake pop maker a mini muffin pan will work too! This recipe makes about 30 poppers. My son loves these with a cup of ketchup for dipping and some baby carrots on the side! What You Need: 4 Hot dogs 1 Box prepared Jiffy corn muffin mix What You Do: Hello Mason Jar Family..Welcome to all of our new members this week!! Well a while back like maybe 2-3 years ago I tried quinoa. I was not thrilled to say the least. In fact I never ate it again until recently. I started introducing it back into my diet about 2-3 months ago since we look for meat alternatives and something lower calorie and also healthier..Thus quinoa! I found you can make salads, put it in soups, make dips, so heck why not make a burger..So here goes...Enjoy! Till we meet again..Mama Carol So here are the ingredients you will need...I may add the cottage cheese is lowfat... Mix it all together..It will have a sticky feel and they are very fragile.. Put a small amount of olive oil in a nonstick pan.(Loving my Orgreenic! Maybe a 1/2 tsp..Shape into patties and cook on medium as you want them to brown but non burn. Cook on each side about 8 minutes or so..I was able to get 7 good size patties.. Add some Sweet Potato fries with some dipping sauce ( 2 Tbsp Low calorie Peppercorn Ranch Dressing) & (2 Tbsp Sugar Free Maple Syrup) a 100 calorie Flat Thins roll some sprouts and a few tomato slices and you got a heck of a meal going!!!Take the roll away and you are gluten-free! Or add a gluten- free roll to take the place of the Flat thins I am using. An awesome dinner or lunch for under 400 calories!
Happy Tuesday Family! So how is everybody doing with Christmas shopping? Thanksgiving prep? I think I have probably made more lists of what I want to do versus what I've already done. I really haven't seen a lot of good deals out there yet, however I did get some good finds at the Salvation Army the other day on Christmas decorations, not like I really needed more but one can never have enough Christmas decorations. Well Hubby thinks you can but that's another story.lol. Anyway let's get to today's recipe which is Turkey Sliders. Yes I used a lot of store bought foods for this however this would be awesome after Thanksgiving with your leftover turkey, cranberry sauce, dinner rolls, stuffing and add some cheese in there.. So here we go....Till we meet again! Mama Carol Here are the ingredients I used... Cut your Hawaiian bread rolls in half ( I bought 2 pkgs and used an 11 X 14 pan) and layer in your baking pan (I spray it with a pan spray first so nothing sticks) Spoon your cranberry sauce on top of your rolls. You may notice some are empty. I have some picky family members (Anybody else have those?) Next add your turkey..I used Oscar Meyer only because it had a coupon.. Next goes the stuffing..(yup same picky eater..lol) Add the cheese..I used Swiss however you can use what you wish.. Melt about 1/4 cup or less of butter/margarine to brush over the tops of the buns.. Add the tops..brush with margarine/butter..sprinkle with some salt & pepper. Bake at 375 degrees for about 25 minutes. Don't these look yummy! Add some Sweet Potato fries..Enjoy!!
Happy Saturday Family! Where has this week gone? It seemed like it was Monday and before I knew it we were back to the weekend again! If your like me as it gets closer to the Holidays it seems your time gets less and less. So I try to find ways to cut corners to give me more free time. Unfortunately I have my days and nights mixed up so when I should be having lunch I'm actually just eating breakfast. So I stumbled onto www.Bigredkitchen.com the other day and was inspired by the breakfast jars.
I never thought of breakfast jars before.Thought of everything but breakfast. So what do you do when you have 2 1/2 already roasted potatoes, 1 onion, 12 sausage links, 8 turkey bacon slices, 3 mini peppers, 2 cups of spinach, 1 dozen eggs, 1 cup lowfat cheese and a cup of organic milk? Why you cook breakfast of course! I chopped and diced everything and cooked breakfast for Hubby and I put it into pint size mason jars and we have breakfast for the next 3 days. (I do have to admit we both sampled as well so we would have had enough for 4 days) When we are ready to eat them we just pour the contents of the jar on a plate and voila meal made! 1 minute breakfast! Now thats my kind of meal! Took me about an hour to put everything together but still well worth the time and I know we are having a substantial meal. Jars can be stored in the fridge for 4 days or so. Hmm..Now it's lunchtime..What can I put in a jar? Till we meet again..Mama Carol Happy Wednesday Family! This past week had seemed like a whirlwind! I am not getting things done as quickly as I would like them to be. Like I said on Facebook I have been scurrying to get my Ebay & Etsy store stocked for the upcoming Christmas season. I'm getting there slowly but surely.lol..So anyway the other night hubby says he wants to make cookies. He was checking the cabinets to see what we had to make cookies with. I remembered the recipe my Daughter uses all the time to make peanut butter cookies. He said what about flour you can't make cookies without flour? I said nope, no flour. He said these can't be good. He was surprised they were good. 3 ingredients. 1 egg, 1 cup any kind of peanut butter, 1 cup of sugar. Mix together. Roll into little 2 inch balls. Take a fork and press down on the tops to flatten a little and they get that grid mark on them. Bake at 375 degrees for about 10 minutes. Done! You can't get much easier then that..And Hubby was very proud of his cookie making :) Till we meet again...Mama Carol Cookies Just Coming Out Of the Oven :)
Happy Humpday Family! I'm trying to work on getting my Ebay & Etsy store filled for the Holiday season so I look for anyway I possibly can to save time. Cooking is one of them. Casseroles, the slow cooker and one pot/dish meals are such time savers for me! So I hope in the next few weeks/months to give you lots of recipes. You know I realized today what a difference a day makes. When it was October 31st I thought I've got plenty of time to work on my Granddaughters blanket set. I've got plenty of time to stock my stores then November 1st came. Yikes Christmas is next month! How am I ever going to get everything done on time! See one day and the difference it makes. Anyway today I made chicken in my glass casserole dish. I love that dish! I didn't take step by step photos as it is really pretty self explanatory so not a lot of instructions needed :) It however was delicious! Till we meet again..Mama Carol
Happy Monday Mason Jar Mamas Family! At last the weather has been a little cooler here. Nice to not have the air conditioner going and the doors open. And even though I love my comfort foods in the fall I know I still have to try to eat somewhat healthy. It has become more of a habit then anything but before I go to bed I have a frozen yogurt. Now this isn't the ice cream kind it is yogurt this is regular yogurt that I have frozen as I LOVE frozen treats!
So after looking at all of the ingredients on the regular and store brand yogurts and seeing the sugars and the processed ingredients I knew there had to be a better way as I am trying to go as organic as possible. So then I found Stonyfield organic yogurt. It is so yummy! So then I mixed in some frozen no added sugar fruit. Even better! Bought myself some 8 oz freezer containers put my yogurt and fruit in my Nutribullet and voila! Now if you don't have a Nutribullet you can use a blender or if you let your fruit thaw somewhat you could use an immersian blender. I add the yogurt and the fruit I want blend pour in my containers, put in the freezer and I now have at least 6-7 8oz containers without all the added sugar and I can have as much fruit as I want. Try it out for yourself and leave a comment..we love comments :) Till we meet again..Mama Carol Happy Saturday! The past few days have seem to be a blur. It seemed like it was Halloween and before I knew it I realized Christmas is next month! Yikes! So I have been very busy between my Ebay business and my Etsy business trying to restock and come up with lots of new items for the Christmas season plus try to keep up with writing. It sometimes feels overwhelming but I love to see new people finding us :) and writing for those that are already part of our Mason Jar Mamas family. So, have you ever had a meal you can just keep eating and eating. You put your fork down and 2 minutes later go back for more? Well this is going to be one of them! I don't make it often because #1 I have to admit is is not the healthiest but the main reason I can eat and eat until it is gone. I feel like a stuffed turkey on Thanksgiving day but it is so worth it..lol. I found this recipe in with a bunch of old recipes given to me by my neighbor and thought I would give it a try changing a few things but the results are still amazing! If you haven't tried any of our recipes yet you have got to try this one! Please feel free to leave any comments ☺ Till we meet again..Mama Carol Use about 12 oz cooked diced chicken breast. Saute with 1 small chopped onion Cook a 12 oz bag of Light n Fluffy Egg Noodles till Al Dente (almost cooked getting fancy.lol) In a mixing bowl mix together 2 cans (10.5 oz I believe) of condensed cream of chicken soup. Mix in 1 and a 1/4 cups of lowfat sour cream. Melt a half cup of butter or margarine in a pot.. While your butter or margarine is melting crumble about 25-30 crackers. I used Publix party rounds.Mix them in with the butter once melted. Set aside. Now mix the cooked noodles, chicken, and the onion in with the soup & sour cream mixture. Preheat your oven to 350. Spray your dish with a pan spray. Place everything in a 9 x 13 in casserole dish. Sprinkle your buttered crackers on the top. I spray everything with pan spray not only does it grease the dish but it make cleanup easier as well. Bake at 350 for about 30 minutes. Voila! Finished!
Happy Wednesday! Remember I said the other day when I posted the Halloween mix the autumn would follow? Well here it is. I actually done it pretty cheaply too and it makes a great gift for somebody or just keep it on your table and if it's like my house it won't last long! I made the mason jar lids from some scrapbook paper I had here. I just traced around the lid and cut them out. Added some orange organza ribbon a leaves and voila! a beautiful gift! This is the ingredients I used: 5 cups of Rice Chex 2 cups of mini marshmallows 1 box of 1 oz Craisins ( They usually come 6 to a pack) 2 boxes of 1 oz raisins (they usually come 6 to a pack as well told you it was this & that.lol) 2 cups of candy corn 1 1/2 cups of m&m's 1 cup white chocolate chips Of course feel free to add your own ideas. Coconut, sunflower seeds, chocolate chips, ect.. The recipe above made 2 quart jars and 2 pint jars. Hmmmm..What Do I Choose?
