Happy Saturday Family! Where has this week gone? It seemed like it was Monday and before I knew it we were back to the weekend again! If your like me as it gets closer to the Holidays it seems your time gets less and less. So I try to find ways to cut corners to give me more free time. Unfortunately I have my days and nights mixed up so when I should be having lunch I'm actually just eating breakfast. So I stumbled onto www.Bigredkitchen.com the other day and was inspired by the breakfast jars.
I never thought of breakfast jars before.Thought of everything but breakfast. So what do you do when you have 2 1/2 already roasted potatoes, 1 onion, 12 sausage links, 8 turkey bacon slices, 3 mini peppers, 2 cups of spinach, 1 dozen eggs, 1 cup lowfat cheese and a cup of organic milk?
Why you cook breakfast of course! I chopped and diced everything and cooked breakfast for Hubby and I put it into pint size mason jars and we have breakfast for the next 3 days. (I do have to admit we both sampled as well so we would have had enough for 4 days) When we are ready to eat them we just pour the contents of the jar on a plate and voila meal made! 1 minute breakfast! Now thats my kind of meal! Took me about an hour to put everything together but still well worth the time and I know we are having a substantial meal. Jars can be stored in the fridge for 4 days or so. Hmm..Now it's lunchtime..What can I put in a jar? Till we meet again..Mama Carol
