AS I stated in my last blog how much I like Popsicles. So while on my Popsicle extravaganza I was throwing whatever ingredients together that sounded good. This one sounded incredible! So here we go....
1 cup of unsweetened almond milk 1 Tbsp chocolate syrup 1/2 cup frozen cherries 4-5 fresh cherries Only 4 ingredients, somewhat healthy and get this only 47 calories!!!! Put everything in your Bullet, Blender or whatever you may use to blend ingredients. Except for the 4-5 fresh cherries. Cut those up and add after the other ingredients are blended to give you a few bites of fresh cherry bites. Pour into 3 ice pop molds and freeze..( I got my molds at the dollar store) This recipe made 3 you can add a little more of the ingredients to make an even 4. Enjoy!

Happy Tuesday family! While trying to decide what I was making for dinner I started cleaning out my fridge. I found a package of Thin Crust Artisan Flatouts that were about to expire. A partial package of basil cubes, Some plum tomatoes, 1/2 bag of fire roasted peppers & onions from Trader Joes, some chicken breast from a previous night, and a partial package of Belgioioso Mozzarella Cheese.
Then the light bulb went off Pizza! I can eat pizza in anyway shape or form, with or without sauce. Sausage, Pepperoni, ect. However this was going to be more on the healthier side. In fact when I figured out the calorie count it came out to less then 300 calories for an entire flatout! Paired with a salad and I was one happy camper! Even hubby gave it high marks and said it was a keeper so here we go!! 4 Flatout Artisan Flatbreads 3 Basil cubes (I microwaved from a frozen state) Fresh basil is best but I only had frozen. 3 Plum Tomatoes 1/2 bag Fire Roasted Peppers & Onions 6 oz diced chicken breast 6 oz Belgioioso Mozzarella Cheese Saute peppers and onion with diced chicken breast to heat. Put flatbread in a preheated 375 degree oven for approximately 3-5 minutes. Take out then put all your ingredients on top. I used a knife to spread the basil on the bottom of the flatout and then worked up from there and placed back in the oven for around 5 minutes. Under 300 calories per flatout and 21 grams of protein! Yesterday was National Ice Cream Day, so we HAD to celebrate, but I didn't want just plain old ice cream, and then I remembered that I had some extra flour tortillas. I had to borrow some vegetable oil from mom, and in return she demanded one of these scrumptious treats! They are amazingly easy!
For the Sopapilla: 4 6in Flour Tortillas 1/4 Cup Vegetable/Canola Oil (or enough to make about an inch of oil in your pan Cinnamon & Sugar Mixed 1/4 Cup Honey Heat oil in sauce pan. Gently drop in 1 flour tortilla and brown each side. It may bubble up. Remove tortilla and sprinkle with cinnamon and sugar on both sides & drizzle with honey. Repeat with remaining tortillas. Top with a scoop of vanilla ice cream & blueberry compote Blueberry Compote 1 Cup Fresh or Frozen Blueberries 1/2 Cup Sugar 1/4 Cup Water Put all ingredients in medium pot and simmer on low being sure to frequently stir as to not let the sugar burn, as blueberries soften lightly mash with a fork leaving about 1/2 the blueberries whole. Keep at medium heat until liquid starts to form a syrup like texture. This can be served hot or cold. These are also amazing just served as is!!! no need for ice cream or other toppings. I'm trying to get a new soap business off the ground so I am finding my time has been very limited, however here I am! I wanted quiche the other night but didn't want the big pie pan kind so I decided to get out the muffin pan..now what to put in it? I had some some fresh spinach nearing an expiration date, along with some fresh mushrooms. And then I noticed a bowl of fresh creole seasoning mix I found on clearance at Winn Dixie almost near it's due date..Well I guess I had my answer what to use. The creole mix especially reminded me of a show I used to watch with my Mom with this New Orleans chef named Justin Wilson. That guy was one heck of a cook and a storyteller to go with it. His tagline was always "I Guarantee It". Anyway let me get back to the recipe.lol. So this makes 12 muffin cup size quiches. Get this! Only 60 calories each! And 7 grams of protein in each one! So away we go with the recipe... Preheat your oven to 375 degrees Spray your full size muffin tins Don't let the name fool you! ( with some non-stick spray (I use Pam) Saute a 10 oz bag of fresh spinach (cook until wilted about 5 minutes with a little non-stick spray and a little water) Saute 8 oz of fresh mushrooms (Use a little non-stick spray about 5 minutes) Mix 6 eggs with 1 cup shredded cheese. ( I used 1/2 cup fat free mozzarella and 1/2 cup fat free cheddar) 1/2 cup Creole Mix (onion,celery,green bell pepper,red bell pepper, green onion, parsley & garlic. Now I don't like mushrooms and hubby can't do peppers & onions so I halved the egg mixture after I mixed the eggs and added the cheese to it. In one half I put in the Creole mix & half the spinach and mixed it. In the other half I added the mushrooms and the other half of the spinach and mixed it. I then used a soup ladle and filled the muffin cups evenly. Bake for about 20 - 25 minutes or until a toothpick inserted in the center comes out clean. Don't These Look Yummy!
Happy Humpday family!! Well today my family and i were supposed to go to the park but due to unfortunate events (rain) that didn't happen. So what to do on a rainy day? I have been wanting to go check out what Trader Joe's was so today I got the chance. I have to say I was MAJORLY impressed! There prices were lower then my favorite shopping place on many, many items! I only wish I didnot have a fridge full of produce already or I would have been scoring big time! So many items to choose from and all the low calorie, GMO free, no artificial colors, preservatives, trans fats or MSG..I could have sworn at one time I thought i heard the sounds of trumpets..Ok so maybe it was the radio..but..I was impressed and I know where I will be going back for my big food shopping trip. Now on to dinner and our 2nd stop..Whole Foods!! Doing the Snoopy Dance!! There food bar is to die for however...Do not go there when you are ravished or you will never be able to decide among all the goodness that surrounds you. On the flip side I walked out of Whole Foods with nothing..zip...nada..Here's what happened I ate..I was full..nothing appealed to me. But I think in all reality I was still blown away by Trader Joe's..lolSo that was my venture for the day..If you get the chance check them out! You won't be sorry!..Till next time.... Can you believe I got all this at Trader Joe's for 36.25!!!! The soup, salad and sandwiches here are so yummy! This was my dinner..Herb Chicken Caprese on Ciabotta bread..I am missing the Sweet Potato & Kale soup...It was delicious! Hubby opted for pizza..can you see the fresh slices of tomato & mozzarella cheese? He is having Potato Gouda soup..I didn't try the pizza but the soup was really good! It's the little things in life that excite me..Like a bathroom sink that is nothing more then a counter top slanted upwards somewhat so all the water goes right down. I think I need one!
Happy Tuesday Family..I remember years ago my Mom used to get fresh kielbasa at our local butcher shop. Kielbasa and knockwurst actually. Well I have not seen either for years. I always see of course the packaged stuff like Hillshire Farms kielbasa but nothing like we used to get at the butcher shop...Until the other day while shopping at my local Publix store!! Could it be? Could they possibly have those links of pure yumminess? In the fresh meat department!
A package had to be mine! Now what could go with it? Garlic cabbage of course..Others would choose sauerkraut but I was looking at something that would be filling without any other side dish. (I did have a salad though) ..Let me tell you the kielbasa was as good as I remembered. And the garlic cabbage was a perfect addition! And get this only 306 calories per serving!!! And if your watching points 7 points. so without any further adieu here is the recipe..Try it for your dinner this week..Or lunch..Or breakfast..lol 1 pkg fresh kielbasa (16 oz) 1 head cabbage..about 8 cups 2 tbsp minced garlic 1/2 cup low sodium vegetable broth cooking spray for pan such as Pam Mrs. Dash for seasoning Spray pan with cooking spray..Saute cabbage on medium until softened..add garlic and saute a few more minutes until garlic is browned.Add some Mrs. Dash seasoning and vegetable broth.Cook down until almost all broth is absorbed. In a separate fry pan spray with cooking spray and cook your kielbasa on medium until browned and reaches a temperature of at least 165 degrees. Serve on top of cabbage..Voila! I guess I can still officially say Happy Tuesday Family! When I was growing up the one thing I loved was my mom's chicken salad..She put onions and celery in hers and a few different spices. Through the years I have tried adding a few different ingredients to explore my own tastes. Now I looked for ways to cut back on the calories but still keep the flavor and I believe I have found it!
I could not believe when I tasted it how good it was! And when I inputted all the numbers how low in calories it is per serving. And for those counting points this will be a hit for you! So here goes... 8 oz cooked chicken breast 1/4 cup mandarin oranges in light syrup (drain juice) 1 1/2 cups green and red grapes 1/4 cup chopped water chestnuts 1/2 Red Delicious apple 3/4 cups fat free yogurt 1/4 cup light mayo (I used Hellmanns lowfat only 15 calories per Tbsp) This makes 4 servings..Only 138 calories per serving and for those watching points 4. Serve in lettuce wraps....Enjoy! |
