Hi Mason Jar Family! I started making lunches in a jar about a year or so ago. I find it is so much easier to reach in the fridge and just take out a jar, pour it in a bowl or plate and voila! Quick lunch! I will be listing a few different recipes within the next few days of mason jar recipes. It is relatively easy to put together and most are quite low in calories. No need to use a vacuum sealer and they can stay in the fridge for up to a week. So if you are looking for something to help keep you on track or just something to make a quick lunch try out making some jars of this wonderful Mandarin salad. Be sure to layer it in the jar as listed otherwise you will have a soggy salad.I use quart size mason jars.You can double or triple the recipe so you will have lunch for a few days. Start layering your items as followed: 2 Tbsp light honey Dijon dressing 3 oz sauteed chicken breast cut into pieces 1/2 cup mandarin orange slices in light syrup or in it's own juice 2 cups chopped lettuce (you can add some fresh spinach leaves too if you would like) 1/4 cup dry chow mein noodles (add these after salad is on plate do not refrigerate otherwise they will get soft in the fridge) After you have layered all of your ingredients just screw the top on and put in your fridge until ready to eat. Only 330 calories per jar!

As a mom to a busy toddler who loves to eat, sometimes taking the time to make a somewhat healthy meal just isn't an option. Just because it's lunch time doesn't mean he stops trying to feed the dog the remote, swipe my tea,or climbing and jumping from things that give me a heart attack, so I need something quick without reaching for junk. My need to save time and not wanting to serve my son complete junk brought me to this. I use nitrate free hot dogs, and jiffy corn muffin mix and pop the mix into my cake pop maker. If you don't have a cake pop maker a mini muffin pan will work too! This recipe makes about 30 poppers. My son loves these with a cup of ketchup for dipping and some baby carrots on the side! What You Need: 4 Hot dogs 1 Box prepared Jiffy corn muffin mix What You Do: Hello Family..This is a story about our plant I named Georgette.She has been a part of our family for years. When she was purchased she had about 4 stalks with leaves growing off of them. She would sit on the plant stand and watch the daily activity. At Christmas time I even decorated her with little red ribbons. She was growing quite large actually outgrowing the pot she was in so Hubby thought it was time to put her in a bigger pot.
Georgette didn't like her bigger pot in fact she rebelled and little by little her leaves started falling off. I tried giving her plant food and made sure she wasn't over watered or in the cold or direct sunlight too long but to no avail she didn't bounce back. All of her leaves fell off leaving nothing but a stalk and even that withered up. I didn't want to just throw her away so she was put outside next to the porch along with a few extra flower pots we had. Seeds floating in the air caused weeds to fill the area of dirt where she once stood tall and proud. About 2 years have now gone by. The other day Hubby was outside filling the birdfeeder and he came in and said you will never believe it Georgette is back! Now it is funny to see him get excited about this plant..lol..Here she was actually growing sideways out of the pot she wanted out! 2 years later! It really made me think.... I thought Georgette was done. But there was still a glimmer of hope that's why I didn't want to just throw her away. And here 2 years later she is back standing tall and proud once again. She is a fighter! When she gets a little bigger she will once again be placed on the plant stand adorned with ribbons at Christmastime for now she is happy sitting near the TV watching the daily activity..Till we meet again..Mama Carol Hello Mason Jar Family..Welcome to all of our new members this week!! Well a while back like maybe 2-3 years ago I tried quinoa. I was not thrilled to say the least. In fact I never ate it again until recently. I started introducing it back into my diet about 2-3 months ago since we look for meat alternatives and something lower calorie and also healthier..Thus quinoa! I found you can make salads, put it in soups, make dips, so heck why not make a burger..So here goes...Enjoy! Till we meet again..Mama Carol So here are the ingredients you will need...I may add the cottage cheese is lowfat... Mix it all together..It will have a sticky feel and they are very fragile.. Put a small amount of olive oil in a nonstick pan.(Loving my Orgreenic! Maybe a 1/2 tsp..Shape into patties and cook on medium as you want them to brown but non burn. Cook on each side about 8 minutes or so..I was able to get 7 good size patties.. Add some Sweet Potato fries with some dipping sauce ( 2 Tbsp Low calorie Peppercorn Ranch Dressing) & (2 Tbsp Sugar Free Maple Syrup) a 100 calorie Flat Thins roll some sprouts and a few tomato slices and you got a heck of a meal going!!!Take the roll away and you are gluten-free! Or add a gluten- free roll to take the place of the Flat thins I am using. An awesome dinner or lunch for under 400 calories!
