Hi Family! Today we are making breakfast burrito's. I actually promised my Grandson months ago I would make him some so he can just heat and eat on his way to work. Well I finally got to it (truth be told the chickens have been on a laying spree and I had an over abundance of eggs so had to do something with them) so anyway... So a few years back someone who worked for a famous food chain known for pancakes..hint...hint..told me the secret for the fluffiest scrambled eggs ever. So what is this secret additive? I have been told in the past try baking soda, use an immersion blender, water instead of milk, condensed milk, etc, etc, well I have tried all those however never got the consistency or flavor I was looking for. But when I tried what this cook told me it was pure magic! I was dancing around my kitchen singing the praises..(Ok a little drama added in there. But they did turn out good.. The secret? Pancake mix. And you don't even need that much of it. I use complete mix that you just add water too. If I'm making eggs just for my Husband and I, I only use about 2-3 Tbsp if I'm making a batch like I needed for the burrito's I used a 1/4 cup and they came out wonderfully! With some extra food items breakfast burritos were being rolled.. Here is the list of ingredients I used.. 15 eggs 1/2 cup milk 1/4 cup complete pancake mix Mix until no lumps appear in your mix and eggs are blended. Spray your pan with non-stick spray. Cook on medium heat making sure to keep turning and mixing in the pan. And then turn down as your eggs start cooking as you don't want to cook them to fast or too high of heat. When your eggs are done put them in a bowl until they cool down enough to work with them. I then had a package of 12 tortillas (Purchased from Dollar Tree Yes! Dollar Tree!) 10 sausage links 1/2 to 1 cup frozen spinach (depends if you like it) note: I did thaw the spinach 1/4 cup blended cheese (I used Mexican blend) Open your package of tortillas fill with a few Tbsp of cooked eggs, add a sausage link (I added them frozen) grab a pinch of cheese, and a few Tbsp spinach. Roll up and start again. I put 2 each in a freezer bag. Now when I get up I pop one in the microwave for about a minute & a half and I am ready to go. Cost was around 6.00. While on my monthly shopping trip I found this amazing Watermelon flavored cake mix and frosting by Betty Crocker and decided to create some Cupcake Jars. What You Need: 1 Box Betty Crocker Watermelon Cake Mix 1 Jar Betty Crocker Watermelon Frosting 1 C Chocolate Chips 6 Pint Size Mason Jars- Jelly Jars Bake according to package directions in a large glass pan. It has been a while since I have written anything but I hope this blog turns in to many! It is amazing how we get so sidetracked in this thing called life. We made our first video the other day and we are hoping to continue with that as well. So we won't only be blogging but vlogging as well. A year or 2 ago I had a dream. That dream was to be able to reach out to people all over the nation with our stories, recipes, crafts and to be able to do this working side by side with my Daughters. We took off with all sorts of dreams and plans but shortly after it seemed everything was falling apart. Nobody had time, everyone was busy and we really didn't think about it too much. Well about a week ago this dream was given back to me, you see there is a plan for my life, there is a plan for your life unfortunately we get easily distracted. Sometimes it's money, sometimes it's things but if you have something buried down deep inside of you that you want to achieve it doesn't matter the distraction that dream will come back to you. Grab it by the reigns and give it everything you've got to make it too fruition! Don't wait another day! Put that dream on the front burner! A wise man once said.. If you can imagine it you can achieve it! If you can dream it you can become it! Ok so now I will get back to the recipe..I don't know if I needed to hear that or I just got somebody stirred up because they have a dream waiting to come out! So anyway here is the recipe for my Backyard BBQ In A Jar.. 4 oz grilled or sauteed chicken breast 1 Tbsp BBQ sauce (I like Sweet Baby Rays Sweet & Spicy) 1 Tbsp Light Ranch 1/2 ear cooked corn on the cob (kernels cut off) 1/2 cup cherry tomatoes 2 cups of lettuce Put in your sauce and dressing. Always layer sauces first so your lettuce doesn't get wilted. Anyway this is what your jar will look like. I used my Fitness Pal app to get some calorie counts and this is what I have. 334 calories, 24 carbs, 10 grams of fat and 26 grams of protein. So up she climbed on the bed (which she clearly knows she is not allowed to do) and hit my hand with her nose to guide me as to what she wanted me to do. While petting her, I came to realize that I wished I had faith like my dog. She never worries about where her next meal is coming from, she knows that she gets fed twice a day and even gets little treats and snacks from our 3 year old if she can follow him around long enough. Even when she is thirsty she walks into the kitchen and takes a few laps from the water bowl, in the corner, where it always is. When she is feeling insecure, she runs and hides in her "bed" ( a large cage kept in the living room), no matter what she needs or wants- with the exception of things that will hurt her, she knows she will always be provided with. She also knows that her obedience gains rewards- if I tell her it's time to go in her bed, she runs right in, Why? Because she has come to know that going in her bed, means she gets a treat.

It's amazing how many verses there are that talk about Gods provision over us. From housing, to food, even down to clothing, while they may not be the things we WANT we are always promised what we need when me make the choice to follow Him, and just like Ellie, our obedience reaps rewards. When we follow God we are, many times lead to the very provisions that have been promised to us. So from here on out, today, and the days after, I'm choosing to have Faith Like Ellie. This creamy, delicious, hearty (and healthy) makes a great fall dinner. Serve with tortilla strips or croutons to add a bit of crunch.
1 Large Cooked Diced Chicken Breast 1 Yellow Onion 1 Clove Raw Garlic (or 1 tbs chopped garlic) 1 Can Bushes White Beans - In Mild Chili Sauce 1 Can Vegetable Stock (you can use chicken stock if you prefer) 1/2 Can 100% Pumpkin Puree (not pie filling!) Pumpkin Pie Spice & Cayenne Pepper to taste 3-4 Leaves Fresh Sage- Chopped fine Sautee Chicken, Onion, Garlic, & Sage to carmalize onions & release garlic and sage aromas and flavors.- Set aside In a deep pot wisk together Vegetable stock & Pumpkin Puree Add chicken,onion, garlic, & Sage and stir Add can of beans in chili sauce (do not drain) and stir together Heat through to light boil Taste, if desired add a sprinkle of pumpkin pie spice & cayanne according to your taste. If you notice your chili seems too thick add 1/4 cup water. If it seems too thin add a little flour and stir. Serve & Enjoy This past weekend fall hit Florida! Right now the scent of fresh baked pumpkin bread and my cinnamon broom are filling my house (and I may or may not have a cinnamon apple candle burning) and admittedly I went a bit crazy on the pumpkin spice flavored stuff when I did my monthly shopping trip on Sunday. Pumpkin Spice Tea, Pumpkin Spice Bread, Pumpkin Spice Pizelles, and even Pumpkin Spice lip balm. I think I may have an addiction to all things Pumpkin Spice. Anywho I decided what better way to welcome in fall then to round up some of my favorite Autumn posts of the past from Mason Jar Mamas.
Being the foodies that we are the Mason Jar Mamas are always trying new foods. So I figured we could start Food Review Friday. Some of the most amazing foods can come from the most unexpected of places and today is one of those days.
Yesterday while browsing my local Dollar Tree, I stumbled upon these Echo Lake Foods Pumpkin Spice Waffles, and me being the I LOVE ALL THINGS PUMPKIN fan that I am, I just had to have them. They sat in the freezer from the time I came home til I woke up this morning calling my name. They were to be my breakfast. Not expecting much from dollar store waffles, I opened the box and was very pleased with the color and scent of these pumpkiny breakfast treats. Into the toaster they went and the scent of fall filled the kitchen, as I removed them from the toaster I could feel the warmth and crispness as I put them on my plate. Topped with a little butter and some syrup (although it didn't need either one, I could have just eaten them plain) and served with a sausage patty it was a delicious change to my usual morning yogurt. At only 150 Calories in 2 waffles these were a great option for me as I continue my weight loss journey. I'm thinking you could also make one as a snack and top it with cookie butter, or even just some plain ole peanut butter if you want. Or maybe a festive fall egg sandwich? Any way you decide to eat them Echo Lake Foods Pumpkin Spice waffles are sure to make your tummy & wallet full and your taste buds happy. One of the best things about living in the south is the abundance of Publix stores. If I had to pick one grocery store to shop at, Publix would be it. Especially "My" store, the one closest to me, the one I shop at most. This is also the store that has saw my son grow within my belly, and the store that now is all to excited to stop and say hello and call my son by name. One of the best parts of publix is their Aprons Simple Meals program, which is always the best bet when I'm clueless as to what to make for dinner.
