Happy Tuesday everybody! Well if you are like me you are always looking for ways to get the cooking done and out of the way and what better then a complete meal in a crockpot! Whats even better is if you can prep it all the night before set it in the fridge and when you get up place it in the cooker turn it on boom you are done. Dinner out of the way! One thing off your checklist! I never thought I would get tired of cooking..lol.I was always going to be like Betty Crocker or something. These elaborate meals every night. (Yes it was a dream) Now there are 3 words in the English language I absolutely dread. What's For Dinner? So I try to find whatever way I can to make it as easy as possible. My crockpot has become my friend "sigh". I look for a lot of recipes and create a lot of my own. After reading you can make baked potatoes in your crockpot that opened up a whole new world for me! Yes I got very excited! So if I can make baked potatoes, heck lets go for the entire meal! And if I can do white potatoes why not sweet potatoes? Alas that was our dinner one night a complete meal. Pork loin w/mushroom gravy & onions, sweet potatoes with olive oil & rosemary & brussel sprouts with a splash of lemon and seasoning. Let me tell you it was good!! Now I know there are lots people who don't like brussel sprouts so feel free to switch out for corn, carrots, ect. So here goes..Crockpot meal # 2. If you missed #1 it is in our recipes under Complete meal in a Crockpot. BBQ chicken... Till we meet again..Mama Carol Start out spraying your crockpot with Pam or some kind of non-stick spray. You will love that you did this when cleaning afterwards :) Add 6 pieces of pork loin. Add 1 chopped onion. Add a 10.5 or 10.7 oz (sorry I didn't write it down) can of condensed cream of mushroom soup.(Do not add the water as stated) Place a piece of foil over the soup and the pork loin to cover it as you are going to set your potatoes on top. Cut up your sweet potatoes into bite size pieces. (I used 2 large for this recipe) I drizzled on some olive oil (about a tbsp and added about a tsp rosemary and a tsp salt free Mrs. Dash. Wrap tightly in foil. Place on top of pork. I added a bag of frozen brussel sprouts to this. I poured the bag in some foil, added a splash of lemon and some Perfect Pinch seasoning. Wrapped that up and added it to the crockpot. Cooked on low for 6 hours. Enjoy!
