Happy Wednesday Family! I know I said a few days ago I was putting the recipe up for the Caribbean Chicken however between family and life that just didn't happen.
So here I am tonight fulfilling the promise. I was undecided whether I wanted it over quinoa or brown rice and just went with some white rice. Next time I will try to be a bit healthier in my decision. This was the first time I tried the recipe, well it's not really a recipe it was more of a I got this left and this left let's find out what it taste's like put together.So here we go.. 8 oz pineapple chunks 1/4 cup brown sugar 1/4 cup of orange juice 1/2 cup of mandarin oranges 1/4 cup coconut 5-6 chicken legs Put all ingredients in your crockpot and cook on low for 6 hours. Put over your favorite side dish..rice..brown rice..quinoa..whatever your heart desires.. I actually put all the ingredients in a freezer bag first and froze until I needed it for dinner. I pulled it the day before so it would be almost thawed. Yum! Hmm...what to cook next...

Happy Thursday Family! I made it before midnight so I'm still good.Well tonight's crockpot meal was another score! I'm starting to feel a little Rachel Rayish now..lol
This was another meal I prepared on Saturday put it in the freezer, took it out this morning poured in the crockpot, ok so not exactly poured as it was frozen together but you get the just of it..But before I put the lid on it I had planned on having this over rice. Well them Mama Dawn said I would have it over sweet potatoes. Hmmm that got me thinking yeah sweet potatoes so that's what it was. So before the lid went on I put 3 small raw sweet potatoes in with the mix. Then the lid went on to cook for 6 hours on low. It was delicious! Did I mention I am liking this once a week cooking thing? Anyway here is the recipe.I kind of broke it down as well to give you approximate calorie counts.. If you are making as a freezer meal in a Ziploc freezer bag place the following: 1 ring of turkey kielbasa (cut into slices) 1 can pineapple chunks in 100% pineapple juice 1 cup mandarin oranges in light syrup 1/2 cup orange juice Zip and place in freezer.. Cook on low for 4 hours if you partially thawed..Cook for 6 hours if totally frozen..4 hours on low if your just making the recipe without freezing it. This recipe serves 3 and has approximately 320 calories per serving and 22 grams of protein. If you add the 3 small sweet potatoes like I did that will bring the calorie content up to approximately 375 calories per serving and 23 grams of protein. Enjoy! Happy Wednesday Family..Well now I think it may be Thursday though depending on what part of the world you live in..Well Tuesday Mama April put up a recipe for a Give Thanks Burger..Today I am giving a recipe for Almost Thanksgiving Cranberry Chicken. I think we may have our seasons messed up..lol..However the chicken was delicious! Even Hubby gave it high marks and said it is a keeper! Yay! So I put it all together on Saturday put it in the fridge to defrost some yesterday and today put it in the crockpot for 4 hours on high and boom dinner was ready. I even had the couscous precooked so I put that in the microwave for 90 seconds dinner was served!
I really think I am liking this cooking for a few hours on the weekend and dinner is ready all week. Tomorrow night is Pineapple Orange Kielbasa so stay tuned.For now though here is the recipe for my Almost Thanksgiving Cranberry Chicken..Enjoy! If you are making a freezer meal in a Ziploc freezer bag put the following: 1 can cranberry sauce 1/2 packet onion soup 1/2 cup Italian dressing 1 Tbsp minced garlic 8 chicken legs Makes 4 servings. Freeze until needed and then pour ingredients into crockpot and cook on high for 5 hours.. If you are not freezing it and just making the recipe you will only need to cook for 4 hours on high or 6 hours on low. For the couscous I substituted low sodium chicken stock for the water..it was delish! Happy Monday Family..Well as I said on our Facebook page I was going to be giving some recipes for the meals I created & froze on Saturday. Tonight I used the meatballs and made meatball subs with Tator Tots....Next week I will be making my own fries as well so no more packaged potatoes. I use oatmeal in my meatballs instead of bread crumbs so it is safe to say they are also gluten free. I know I used a roll for subs but you can use then for your gluten free spaghetti as well..This is later in the week :) By the way I did find a website that explains Ore -Ida also now carries over 30 different Gluten Free products. I am not going totally Gluten Free I am just trying to do some healthier lower calorie recipes, but if I can accommodate some people that makes me happy too.So here is my recipe I use for my turkey meatballs... 36 oz lean ground turkey 1 egg 3 tsp garlic 4 Tbsp Parmesan cheese 3 tsp Italian seasonings 1 cup dry oatmeal Roll into balls around 2- 2 1/2 inches. Put on a cookie sheet and bake for about 40 minutes at 375 degrees. You can let them cool down and freeze for a later date or serve them immediately just add your favorite sauce. This made 18 meatballs..I divided it into 3 meals so Hubby and I get 3 each.3 meatballs came out to 265 calories and 43 grams of protein. (This is without sauce) Hey Hey Mason Jar Family! Happy Friday Family..Well if you are like a lot of people I know you are scrambling around trying to find that last minute Mother's Day gift or trying to think of something creative for the kids to do for Grandma..Well here it is...Reasonably priced, a lot of items you probably have around your house and the rest you can get at your local Dollar Store .You can even buy enough to make more then one jar! Make tomorrow night project night for the kiddies. They can even come up with some of their own ideas. I went to Clker.com to find a graphic which I printed out and made a mason jar topper with. Then I made a heart tag using the same graphic. Don't fret if you don't have a print program, you can either make your own or a piece of scrapbook paper will work out fine :) I typed out what each item means and taped it to the back of the tag. So have fun! Hello Family! Welcome to a new week! Well before you know it the kids will be out of school for the summer but before they do you know what is going to be said...Drumroll...I need to get a gift for my Teacher!!! Well that's not bad if you have only 1 child and 1 teacher. However with a lot of school's today there are lots of different Teacher's for different subjects which can add up to a lot of presents. Also adding up to a lot of money!
So off to the Dollar store I went. I remember a while ago seeing survival jars, I decided to make a memory jar. Now realize you can put whatever you want in your jar. Most of the items I got at the Dollar store were in packages and I broke them up so you can get 3-5 jars or more out of each packaged item. (I may note some stores do sell mason jars if not you can get 12 of them at Walmart for 9.00) I them found a cute little chalkboard clipart on Clker.com and put the teachers name on it. Any gift tag will work though :) I did type in very tiny letters on printer paper what was in the jar and taped it to the back of the tag.
I also found some jar lids I had chalk painted some time ago and thought that would be a cute addition.Do not fret if you do not have one, scrapbook paper works just as well. Plan a craft night with your kids and let them come up with some of there own ideas on what they want to put in the jars..Have fun! Here is a list of what I used:
Cocoa: For a well deserved break
Tissues: To wipe away tears
Mints: Because you are worth a mint to parent's
Pen: To write down your class memories
Seeds: For the seeds of knowledge you have sown
Candle: For when you are burning the candle at both ends

Starburst: To give you a burst of energy when you need it
Eraser: For life's little mistakes
Paper clips: To keep it all together
Puzzle Piece: Without you the class would not have been complete
