Happy Wednesday Family..Well now I think it may be Thursday though depending on what part of the world you live in..Well Tuesday Mama April put up a recipe for a Give Thanks Burger..Today I am giving a recipe for Almost Thanksgiving Cranberry Chicken. I think we may have our seasons messed up..lol..However the chicken was delicious! Even Hubby gave it high marks and said it is a keeper! Yay! So I put it all together on Saturday put it in the fridge to defrost some yesterday and today put it in the crockpot for 4 hours on high and boom dinner was ready. I even had the couscous precooked so I put that in the microwave for 90 seconds dinner was served!
I really think I am liking this cooking for a few hours on the weekend and dinner is ready all week. Tomorrow night is Pineapple Orange Kielbasa so stay tuned.For now though here is the recipe for my Almost Thanksgiving Cranberry Chicken..Enjoy!
If you are making a freezer meal in a Ziploc freezer bag put the following:
1 can cranberry sauce
1/2 packet onion soup
1/2 cup Italian dressing
1 Tbsp minced garlic
8 chicken legs
Makes 4 servings.
Freeze until needed and then pour ingredients into crockpot and cook on high for 5 hours..
If you are not freezing it and just making the recipe you will only need to cook for 4 hours on high or 6 hours on low.
For the couscous I substituted low sodium chicken stock for the water..it was delish!
