One of the best things about living in the south is the abundance of Publix stores. If I had to pick one grocery store to shop at, Publix would be it. Especially "My" store, the one closest to me, the one I shop at most. This is also the store that has saw my son grow within my belly, and the store that now is all to excited to stop and say hello and call my son by name. One of the best parts of publix is their Aprons Simple Meals program, which is always the best bet when I'm clueless as to what to make for dinner. Join them at select times every week for meal prep and tasting served by friendly and knowledgeable meal experts. (Shout out to my favorite Aprons Simple Meals Meal Expert! She knows who she is! ). It's fall!! This always tends to be the most exciting time of year for the Mason Jar Mama family. One of the most exicting purchases we've been able to make recently was a nice sized grill. After a traditional Labor Day BBQ With Burgers, hot dogs, wings, baked beans, and Mama Carol's totally amazing potato salad (which is so easy to make- but will have everyone asking for the recipe!) the next night we decided to grill up some bone in chicken breast. It was delicious! I threw it in a bag with some Mojo marinade over night, and then tossed the raw chicken on the grill, served with some corn on the cob and left over baked beans it was an easy weeknight dinner that didn't take too much work to make it delicious. Fast forward a couple days later, and there is still left over grilled chicken in the fridge. As delicious as it was, no one wanted left overs, maybe no one seen them? Not wanting to go to waste I decided to use it for lunch and dinner in the same day. Simply marinating and grilling the chicken was use #1 for our chicken, #2 was chicken Cesar pitas. Chicken Cesar Pitas: 6 oz Grilled Chicken 2 Cups Super Greens (spinach, bok choy) 3 tbs Hidden Valley Ranch Creamy Parmesan Dressing 1 Josephs Whole Wheat Flax Pita
Now onto use #3 for our chicken. I've been really craving some kind of creamy pasta dish so I decided to use the rest of my grilled chicken along with some left over bacon and make a Grilled Chicken & Bacon Florentine Alfredo. 4 Oz Grilled Chicken Cut into Chunks 4 Strips Cooked chopped bacon 1 Jar Ragu Alfredo Sauce 2 Cups Super Greens (Spinach & Bok Choy) 1 tsp fresh chopped Garlic 1 tsp olive oil 1 Box Penne Pasta
It's National Food Safety Month. No one likes getting sick, especially when it's something that can be avoided. Many food borne illnesses can be stopped in their tracks with 4 super easy steps.
1. WASH- Wash everything, bacteria can quickly spread from your food to your hands, to anything else you may touch. Be sure to wash hands, cutting boards, utensils, and even your produce to stop those little buggers from spreading 2. SEPARATE- When washing, storing, and cooking keep foods stored separately. To avoid cross contamination keep things law raw meat and fish away from ready to eat foods, and produce. 3.COOK- Cooking foods to the correct temperatures help kill off any harmful bacteria, if you are unsure if it's the right temp, use a thermometer. 4. Refrigerate- Quickly store any uneaten foods in the fridge to keep them at the right temperature. Refrigeration slows bacteria growth and keeps you from getting sick. Now I know in other parts of the country it's starting to cool down outside, and people are pulling out their fall and winter wardrobes, but alas here in florida it's still shorts and tank tops for us. Being that it's so warm ice pops tend to be a common treat around here, so when my 3 year old asked for ice pops for breakfast, I said SURE! Except we were going to be eating something with so little nutrition for our first meal of the day, so I came up with the tropical smoothie pop. Chopped fruit and yogurt make this a delicious and healthy alternative that you won't mind serving for breakfast! 2 1/2 cup Stonyfield French Vanilla Yogurt-Whole Milk 1/4 cup Emerald Simply Natural Walnuts & Almonds 1 cup Fresh Raw Frozen Cherries 1 cup Fresh Cut Raw Frozen Pineapple 1 Dole Frozen Mandarin Oranges roughly chop fruit and nuts and mix with yogurt spoon into ice pop molds, freeze, and enjoy! *You can also use fresh fruit instead of frozen. **Please note: nutritional facts are based off the recipe and brands that we used.
