I was trying to think of what exactly to write today, for some unknown reason I have been getting brain block. I have tons of pictures I have taken but don't know which ones to share first. Most of those are food but I thought I would switch it up and include some pics of our lazy Sunday day we had. I was on the search for cookie cutters and craft ideas. Found a few craft ideas which will be upcoming when we have Family Craft Day with the family :) Didn't find my cookie cutters though, however I did find them today at the Hobby Lobby. I was absolutely in love with some of this years Santa Christmas pictures. I walk in there and imagine my house being something out of House Beautiful! I kind of feel like most men do I think when they walk into home Depot or Lowe's. Suddenly it's like Bob Villa jumped into them! Or that Holmes on Holmes guy! Well I suddenly feel like I can grab some burlap ribbon and branches and make a Martha Stewart worthy wreath. Sorry to say that will not happen. That kind of crafty I am not..lol. Anyway back to my pictures..Till we meet again..

Though it's fall and the weather is starting to feel a bit cooler it's still warm outside here in sunny FL. Needing a few minutes to catch up on dishes and wanting a fun activity for my son, I wanted to let him paint, however I didn't relish the idea of him ingesting regular paint no matter how non-toxic it is. So Out came the juice mix! I took red,orange, and yellow and put about a teaspoon of powder in each egg cup along with enough water to come about halfway up the cup. Totally toddler friendly, and smells awesome even when it's dry! Be careful though, we did stain the high chair, but it's ok, we were making memories!
Happy Friday everyone! This week went to fast! Only 88 days till Christmas..lol Anyway I wasn't sure what Mama April was doing today for a freebie so I am beating her to it and offering my free download for Tyke's Pumpkin Yummies . Tyke is my 14 year old chihuahua who's still going strong. Maybe it's the treats who knows? These are all natural and he loves them! After I make them I put them in a mason jar and refrigerate them. They will last for 5 days or so however they never last that long in my house. Well happy baking for your puppy! Bone Appetit!
I have been trying a lot of different things with cauliflower these past few weeks as it is a low calorie and kind of filling vegetable. Plus I really like the way it tastes. I have made cauliflower au gratin in the past so I thought well let me try something new and I have had a craving for pizza! Curse you CiCi's pizza commercials! My daughter had made pizza in the past with a cauliflower crust but i didn't want to make it that way. So lets try some turkey pepperoni and mozzarella cheese add some almond milk, throw the peppers and onion right in with it and see what happens. AWESOME is what happened! It actually took away the craving I had going on for real pizza it was that good! So below you will find the recipe. Plus it is in with our recipes so you can print it out. You have got to check it out for yourself! Perfect for lunch or with a salad at dinner or a midnight snack. I hope you enjoy as much as I did.(Even hubby liked it! ) Till we meet again..Mama Carol Cut cauliflower into florets and microwave for approx 5-7 minutes until softened. Cut up 1/2 cup peppers and 1/2 cup onions After cauliflower is done cooking put into your food processor, blender, Bullet or Nutribullet. Add 1/4 cup almond milk, 1 Tbsp I Can't believe It's Not butter Light, 6 slices of turkey pepperoni and 1/4 cup of lowfat mozzarella cheese. When that is just about blended put in your peppers and onions. Hit the pulse a few times as I didn't totally puree those. Pour into an 8 x 8 pan like pictured. Add 1/4 cup of your favorite spaghetti sauce on top, along with the 1/4 cup of cheese that is left and 12 pieces of turkey pepperoni like so...Place in a 375 degree oven for 35 minutes. Voila! Bon Appetit!
Well it is Sunday, your looking through your fridge wondering what to make that is tasty but yet low calorie. Your making some kind of chicken but don't know what to make as a side dish. Hmmm..Some kind of rice dish would be nice, however rice is starchy and your trying to stay away from gluten products. Hold it! You see a head of cauliflower. You remember seeing some kind of rice dish on a cooking show. Ok time to get busy! Ok so I build my own scenarios..lol Anyway this is a cauliflower rice dish I threw together trying to keep the calories as low as possible. It serves 8 and it came out to around 55 calories per serving! So you can take 2 servings if you want..heck eat the whole thing! (just kidding) not a good idea..Anyway happy cooking! Enjoy! Till we meet again..Mama Carol Shred an entire head of cauliflower In a large sauce/frying pan saute 1 cup onion, 3 tsp minced garlic in 1 tbsp olive oil until onions are translucent. About 5 minutes or so. Add 1/2 cup peas (I used frozen) 1 cup shredded fresh carrots and 3 tbsp low sodium soy sauce. Mix and blend veggies for a few minutes. Now add your cauliflower and 1 egg mixed with 3/4 of a cup of egg whites or you could use 4 egg whites. Saute and mix for another 5-8 minutes or so until you no longer see and runny egg whites and voila! A perfect side dish to compliment any meal!
Happy Saturday! If you are like me you love pasta right? I could eat pasta 7 days a week. However I think pasta maybe was a help getting me to where I am today. lol. So I have been looking for lower calorie meals that include pasta but volumizing. (Adding things to bulk it up) A while ago I stumbled across shirataki noodles. I tried the fettuccine ones and didn't care for it at all. However being also a lover of ramen I found shirataki spaghetti noodles which are exactly like ramen noodles. However here is the difference The shirataki noodles are 30 calories for the bag with 0 mg sodium! Now add that to regular chicken broth and you have 260 mg sodium vs 830 from packaged ramen. I used unsalted chicken broth which only gave me 125 mg sodium, so if you are watching your salt intake this could be a recipe for you! By the way shirataki noodles are in the specialty foods section at your local grocer. They are made by Nasoya no fat,eggs,gluten or dairy. So this is the recipe I used. 2 cups of unsalted chicken broth, 1 pkg shirataki noodles, 1 1/2 cups spinach mix. there we go..Of course you can add some of your own seasonings as well. Enjoy!

If your like me in the morning I am running around my house all crazy getting 2 of my kids up for school. 6am is an hour that no one should have to ever get up, but in my house that is when our day starts. So, I go, get my daughter up first she is the one who takes forever and a day to get ready and she is only 9. then it's time for my son who likes to sleep as late as he can.
So by the time I get them out the door hubby is waiting in the driveway. He just got home from his night at work. Off the kids go they get breakfast at school so I only have to worry about me on the weekdays as my 4 year old would rather have cereal then eggs. (He does like pancakes and french toast sticks but we will discuss those in another freezer meal blog.) I don't care to have to pull out the pans, and make a huge mess, just for one small meal. I love freezer meals, they are so easy to just take out what you need. Prepping for a freezer meal takes an hour or so at most, but gives you the time you need to sit down and relax before the next round of kids get up. This breakfast is just like you would get at a drive through only to me it tastes a lot better, and I think is a bit healthier for you. Momma Dawn's Easy Egg ,cheese,and pork muffins: I cooked them in a batch of 20 For this I needed 20 English muffins 20 slices of cheese (any cheese will do) I only made half of them with pork roll,so I used 10 pcs of Taylor pork roll I toasted all the English muffins then added just a half of a teaspoon of mayo to the muffin.If you don't like mayo just omit it.Then I cooked a batch of eggs, I liked them with the yolks just a little runny (you can make them any way you like) Then added a pc of cheese to the top after they were cooked, just until the cheese melted then took it off the burner.I cooked the pork roll in the microwave while the eggs were cooking that only takes 1 min. Then I assembled the muffin sandwich, wrapped them up in tin foil, and placed them all in a gallon size baggie, and tossed them in the freezer, I have breakfast for the next 20 days. To heat, I can just pop them in my toaster oven about 10 min, or regular oven for 10 min (some ovens may take longer or shorter, depending on elevation) Or you can take them out of the foil wrap them in a paper towel and put them in the microwave for about 2 minutes, However they do tend to get a little rubbery cooking them that way.
