Hello Mason Jar Family it's Mama Carol! It seems like forever since I have written last but this year I hope to see you a lot more often. So going off of Mama April's post she asked for one word to sum up what you will want your 2015 year to be. Mine was sacrifice. So I have a lot of goals for the fourth coming year and one of them is living a Vegan life. I am starting off this week with no meats except for chicken & turkey and that will be limited to 2-3 times per week. I also want to give up breads and starches but lets take baby steps.
So that brings me to tonight's dinner which was Spinach Alfredo Lasagna which as my 2 year old grandson would say umm nummy..So that is a thumbs up from Ryan.lol So you will be seeing a lot of Vegan-Paleo recipes from me in the future I hope you enjoy them as much as I enjoy making them and sharing with you. My recipe calls for 6 ingredients and a sprinkle of parsley on top if you like. And as much as I would have liked to make my own Alfredo sauce time did not prevail..Maybe another time..So without further adieu here is the recipe.. 1 lb lasagna noodles 1 cup small curd cottage cheese 2 cups part skim ricotta 3 cups chopped spinach 1 jar Prego light Alfredo sauce 1/2 tsp garlic powder Cook lasagna noodles till Al dente, drain and rinse with cold water. While that's cooling off mix together the cottage cheese, ricotta, chopped spinach and garlic powder. Then lay your noodles flat and put approximately 2 tablespoons of mixture on them and roll up. Pour about a 1/4 of the jar on the bottom of your pan. Mine is 11 x 15 glass. Line up your roll ups and pour the rest of the sauce over the top. I then sprinkled on some parsley flakes. Cover with foil and place in a 350 degree oven for about 1 hour.

This was my first time making wings this way, and I can say no matter the sauce I'm going to use, I won't be cooking my wings any other way! They came out with crunchy skin and the sauce stuck, they were the best wings I've ever made at home.
Ingredients: 1lb Chicken Wings 2TBS Spiced Seasoning (I used Weber Kick'n Chicken) 2 TBS Melted Butter 1/2 Cup Your Favorite Wing Sauce 1Cup Blue Cheese/Ranch Dressing (For Dipping) Directions: 1. Fill a pot with water and 2TBS Spiced Seasoning & Bring to a boil. 2.Drop wings into boiling water and allow to cook 8-10 minutes, some wing sections may not be cooked through. 3.Drain water & Pat wings dry. 4. Arrange wings on a non stick cookie sheet or pan and bake at 350* til outer skin is crisp. 5. While wings are cooking mix 2TBS Melted Butter & Wing Sauce in a large bowl or ziplock bag. 6. Remove wings from oven and toss in butter & sauce mixture. 7. Enjoy!! You can also toss with BBQ or any other wing sauces that you enjoy instead of the traditional buffalo sauce. The other morning I was flipping through the channels and a familiar face caught my eye, Robin Williams was in the midst of an imaginary food fight with a bunch of children, HOOK Was on! This has to be one of my favorite roles that Robin played, at the end of the movie Wendy looks at Peter and says "So your adventures are over?" and without missing a beat Peter replies "No, to live. To live would be an awfully big adventure."- this is perhaps my 2nd favorite movie quote of all time. (First being: Ohana Means FAMILY!- From Lilo & Stitch). Some say adventures are for the Rich, others say it's for those without kids, and I am neither. So is there adventure for me? Yes! I Simply LIVE! While people are dreaming of adventures, laying in bed day dreaming about getting into an open air SUV and riding across the Savanna hoping to catch a short glimpse at a big cat. I AM The big cat. Pawing around the grass with sometimes with a cub in tow, slinking around the giant tree waiting for my prey to pass so I can, at just the right moment pounce and tickle him as we both fall into a fit of laughter. Other then being a safari cat, I've been a pirate sailing across a stormy sea, a dog wrestling with my pup, a cat playing with a ball of yarn and even a dinosaur stomping through the jungle! Every day is an adventure in our house. Why just this morning we built a castle, and went fishing for piranha! I honestly can't recall my life being so full of adventure. Even a walk around the neighborhood turns into a search for lost treasures that turn into art projects when we get back home, and it doesn't cost a thing! So Peter was right. Most of them are yes! While we may get inspired by something we see online, most of the time all we do is see a photo or a few ingredients and then just go and make it. There have been several times a meal has come out fantastic but it's never been talked about or posted because we can't even remember the exact ingredients or measurements. If we do use someone else's recipe, we will always link back to the original and give them credit. 3. What do the Mason Jar Mamas Blog post about? However between a rambunctious 2 year old, and being totally exhausted I forgot to actually post it. So here it is. I'll be posting another later, so keep your eyes out, you get a double dose of Mason Jar Mamas Today! IT'S 2015 The first day of the new year. The decorations have been removed from the tree, the lights are shining their last time, and the garland and snowflakes hanging from the ceiling and giving off their last little glints of caught light before then go into the storage containers awaiting to be joyously strung up again next Thanksgiving (yes we start our Christmas decorating the day after Thanksgiving.), When I go into bed tonight Hallmark will be showing old sitcoms instead of Christmas movies and honestly I'm about in tears. Though I don't think there is any REAL professional diagnosis out there, I suffer from a slight depression after Christmas. I call it PCB or Post Christmas Blues. Christmas is my favorite time of year, the excitement in the air, the joy on Kids faces, patiently waiting for the night Santa makes his visit, family gathered around, and heartfelt gifts being passed along, the whole season is magical. We go from brightly colored lights, shiny tinsel, and Santa's in the yard waving hello to everyone who passes to darkened doorsteps that seem ominous to anyone who even dare look their way. Where does the Magic go? Is there a way to keep it all year round? Do you any of you suffer from the Post Christmas Blues? What are some ways you combat the depression or sadness that comes from un-decorating and the closing of the Christmas season? I'm thinking of doing some Valentines day decorating. Red Garland, White Lights & Pink Hearts may be cute! And arranging some RAK (Random Acts of Kindness) to spread some love :) |
